Liz enjoyed the mushroom stuffed mushrooms on Sunday evening. I put sliced mushrooms with onions, garlic, brown rice and goat cheese into a portobello mushroom and then broiled bread crumbs on top. Actually, I didn't have any bread crumbs so Jon mashed a collection of Ritz crackers for topping. They tasted fantastic for dinner with the red pepper tomato soup I stole out of Liz's food cabinet while she was out for a ride in Jon's convertible. You can tell Liz enjoyed the dinner immensely (I purposefully alter this photo so you don't see all the food in her mouth). However, when I took a mushroom to work the next day for lunch the portobello became as tough and chewy as overcooked calamari. I'll never use this as a dish prepared for next day left overs.
