I made dinner for 4 on Christmas.
The main dish of ham with a raisin sauce was supported by mashed cauliflower (like mashed potatoes) and fresh french bread. My mom came home and said my fresh green beans were too boring for Christmas so she sautéed them with onions, mushrooms and small bits of ham. I guess it was alright to kill the green beans, but I wouldn't have done it.
For dessert I cooked yams and peeled them and mashed them with layers of pears sprinkled with gluten free crumble topping. This was surprisingly yummy for warm dessert and cold breakfast the next morning. I also used the mashed yams to make gluten free pancakes with an egg nog sauce. My dad really liked them. A few days later I used the rest of the egg nog to make egg nog chocolate chip muffins for my dad to take to my brother's family in Tucson. I truly enjoy the unique flavors and spices we can use during the Christmas season.
