I came home from a week of vacation and a month of not eating the food in my cupboards/freezer and my creativity had to take over. In my cupboard I had a can of something without a label on it. I opened the can and found pureed pumpkin, which automatically makes me think of soup. Then next to it I found a can of evaporated milk (I must have purchased these cans back at Thanksgiving). Also in my cupboard was a bag of organic pasta (taken from my Dad's cupboard yesterday). In my freezer I had butternut squash, broccoli and shrimp. Using these ingredients I knew I had to make a soup covering pasta.
I sauteed an onion and found vegetable broth in Liz's spice cupboard. When the onion was clear I added the broth and pumpkin puree. I added some bay leaves and started boiling water for the pasta. Next I added butternut squash and shrimp and let the broth simmer for 10 minutes. When I felt the broth was ready I added the evaporated milk and broccoli. In the end I feel the pasta concoction may be suitable for Liz's dinner tonight. Or we can take it to the Hollywood Bowl tomorrow night and use it as the base for our picnic before the Russian Mystic concert.
