In memorial of Jay Reed a gang of his family and fans made Big Daddy's today. (note: Big Daddy's are originally from Casa Manana's and is a HUGE tostada like bean and toppings extravaganza entree. The restaurant is down the street from the Reed's grandparent's house and it was the place we went to eat after Jay's Arizona burial last February). For all those who are Big Daddy fanatics you have to forgive my morning, vegetarian take on the meal. I want to blame the California Big Daddy creation on the time difference from Maryland, or on the sparse contents of my fridge but actually I only had time to make Big Daddy's for breakfast and so I had to take "liberties". I made the black refried beans on Sunday (my first time cooking refried beans), but I should have waited until Diana had posted her refried beans instructions on facebook so I could have been a bit more conventional in my cooking. On Tuesday morning I fried yellow corn tortillas and then fried 2 sunny side up eggs. I layered the tortilla, bean, egg, cheese and cut tomatoes on two plates (one for me and one for Liz). I ate the vegetarian Big Daddy at my table with fresh flowers placed in a vase.
My morning California Big Daddy was special because of my memories of Jay and my love for the Reeds. It was also special because I normally drink a whey protein shake in the car for breakfast. I was happy to start my day with a warm meal in honor of Jay! I just hope that all the Big Daddy purists will forgive my cooking a non conventional version of a yummy meat Big Daddy!
